SALMON PATTIES | |
1 (1 lb.) can salmon 4 eggs 4 c. fine fresh bread crumbs (8 slices with crust) 1 tsp. each salt and dry mustard 1/4 c. minced parsley 1 med. onion, chopped fine and lightly cooked in 1/4 c. butter Turn salmon with the liquid into mixing bowl. Add remaining ingredients and mix thoroughly. With damp hand, shape soft mixture into patties, using 1/4 cup for each. Place on floured wax paper and turn with wide spatula to coat with flour. Fry in hot butter until hot through and brown on both sides. |
