PUMPKIN BREAD 
3 1/2 c. flour
3 c. sugar
2 tsp. baking soda
1 tsp. cinnamon
1 tsp. salt
1 tsp. nutmeg
4 eggs
2 c. pumpkin (#303 can)
1 c. cooking oil
2/3 c. water
1 tsp. vanilla
1 c. nuts (optional)

Mix flour, soda, sugar and spices together. Make a hole in dry ingredients and add pumpkin, eggs, oil and water. Beat until smooth, add nuts and vanilla. Pour into greased loaf pans and bake one hour at 350 degrees.

This will make two loaf pans or two 2 pound coffee cans. Makes a moist bread and is easy to mail in the coffee cans.
