INDIAN PUDDING 
2 c. milk
3 tbsp. yellow cornmeal
2 tbsp. butter
3 tbsp. molasses
1/4 c. sugar
1/4 tsp. ginger
1/4 tsp. nutmeg
1/4 tsp. cinnamon
1/2 tsp. salt
2 well beaten eggs

Scald milk in top of double boiler over boiling water. Add meal and cook 15 minutes. Add remaining ingredients and beat with egg beater to be sure there are no lumps. Bake in buttered casserole at 400 degrees for 30 minutes or until silver knife inserted comes out clean. Serve hot with whipped or ice cream.
