INDIAN PUDDING | |
2 eggs 3/4 c. molasses 1/4 tsp. salt 1/2 tsp. cinnamon 1 c. raisins 1 tbsp. butter 1/4 tsp. nutmeg 1/4 tsp. ginger 5 c. corn flakes 1 qt. milk Plump raisins in hot water to cover. Drain and add to pudding. Beat eggs. Add molasses, salt and spices and blend. Add milk, corn flakes and raisins and mix. Pour into a greased baking dish. Dot with butter. Set in a pan of hot water and bake at 350 degrees. Stir 3 times, at 15 minute intervals, until partly set, about 45 minutes. Reduce heat to 300 degrees and bake until firmly set, about 30 minutes more. Serve warm or cold, plain or with ice cream or whipped topping. Use nonfat skim milk and omit butter to cut calories. |
