EGG SALAD 
6 hard-cooked eggs
1 cup diced celery
1 tbsp. grated onion
salt and pepper, to taste
dash of cayenne pepper

Cut up the eggs coarsely. Add celery, grated onion, seasonings and mayonnaise. Mix lightly.

Serve in lettuce cups. Garnish with strips of pimento, chopped parsley and stuffed olives.

Makes 6 servings.
