OLD FASHIONED LEMON MERINGUE PIE 
3 eggs
1 1/4 c. sugar
1/4 c. cornstarch
1/2 tsp. salt
2 1/4 c. cold water
1 tbsp. butter
1/2 c. lemon juice
2 tbsp. grated lemon rind
Baked 9-inch pastry shell
6 tbsp. sugar

Beat egg yolks in 1 1/2-quart double boiler. Add combined sugar, cornstarch, and salt. Add water gradually, mixing well. Cook over rapidly boiling water until thick, about 10-15 minutes, stirring frequently.

Remove form heat; add butter, lemon juice, and lemon rind. Cool. Pour into baked pastry shell. Top with meringue made with the egg whites and the 6 tablespoons sugar. Bake in moderate oven (350 degrees) 15 minutes or until browned. Makes 1 (9 inch) pie. Serves 6.
