MEAT LOAF WITH CHEESE STUFFING 
3 lbs. ground beef
3 c. fresh bread crumbs
1 c. minced onions
1/2 c. minced green peppers
4 eggs, slightly beaten
3 tbsp. horseradish
1 tbsp. salt
2 tbsp. prepared mustard
1/4 c. evaporated milk
1/4 c. catsup
2 (8 oz.) pkgs. sharp cheese slices
Snipped parsley

Preheat oven to 400 degrees.

Mix ground beef, bread crumbs, onions and green peppers lightly into eggs. Add remaining ingredients (except cheese and parsley). Mix lightly. Divide into three parts. Pat one part into 10x5x3 inch loaf pan. Cover with overlapping cheese slices. Spread with second part of ground beef mixture. Add six cheese slices. Spread with remaining ground beef mixture.

Put into loaf pan or foil covered cookie sheet, turning up edges of foil to form rim. Bake for 45 minutes. Crumble 2 cheese slices over top. Bake for 5 minutes. Cool for 15 minutes before serving. Garnish with parsley. 10-12 servings.
