GERMAN SLICED APPLE CAKE 
4 eggs
2 c. sugar
1 c. vegetable oil
1/2 c. orange juice
3 c. flour
3 tsp. baking powder
1 tsp. salt
2 1/2 tsp. vanilla
4 c. thinly sliced apples
2 tsp. cinnamon
3 tbsp. sugar
Confectioners' sugar

Preheat oven to 350 degrees. In a large mixing bowl, beat eggs and 2 cups sugar. Combine oil and orange juice and add to egg-sugar mixture alternately with mixture of flour, baking powder and salt. Beat until smooth. Add vanilla and beat well. Pour half the batter in a greased and floured tube pan. Arrange half the apples over batter.

Mix cinnamon and 3 tablespoons of sugar. Sprinkle half of mixture over apples. Top with remaining batter, apples, cinnamon and sugar mixture. Bake 1 hour and 10 minutes until cake tests done. Allow cake to cool 1 hour before removing from pan. Sprinkle top with confectioners' sugar, if desired.
