CHICKEN CORDON FIESTA 
6 chicken breasts, boneless and skinless
1 (8 oz.) cream cheese
2 c. Jack cheese, shredded
1/3 c. minced cilantro
2 c. crushed tortilla chips
1/2 tsp. cumin
1/2 tsp. garlic powder

Process tortilla chips add cumin and garlic powder. Set aside in pie plate. Process cream cheese, Jack cheese and cilantro. Pound chicken breasts until they are about 1/4 inch thick. Place about 2 tablespoons of cheese mixture in center of chicken breast, roll up and roll in tortilla crumbs.

Place chicken breasts in a lightly greased baking dish. Top chicken breasts with rest of cheese mixture. Bake in oven 350 degrees for 25-30 minutes. Serve with Spanish rice. 6 servings.
