SAUSAGE, APPLE, AND CHEDDAR BAKE | |
1 1/2 lb. Granny Smith apples, cored, pared and cut into 1/4 inch thick slices 1 tbsp. lemon juice 2 oz. cooked veal sausage, cut into 1/2 inch thick slices (or substitute 2 oz. Canadian style bacon) 1/4 c. chopped scallions (green onions) 2 slices white bread, made into fine crumbs or 1/3 c. plus 2 tbsp. plain dried bread crumbs 2 oz. Cheddar cheese, shredded 2 tbsp. firmly packed dark brown sugar 1/4 tsp. ground cinnamon 2 tbsp. plus 2 tsp. reduced calorie butter (tub), melted Preheat oven to 350 degrees. In medium mixing bowl, combine apples and lemon juice, tossing to combine; add sausage and scallions and mix well. Spray and spread apple mixture evenly in bottom of pan; set aside. In small mixing bowl, combine bread crumbs, cheese, sugar, and cinnamon, mixing well until thoroughly combined; add butter and stir until moistened. Sprinkle crumb mixture evenly over apple mixture and bake until apples are tender and topping is lightly browned, 20 to 30 minutes. Makes 4 servings: 267 calories per serving. 1 P, 1/2 B, 1/8 V, 1 FA, 1 1/2 F, 30 optional calories. |
