MAPLE WALNUT DATE CHEESECAKE 
CRUST:

20 vanilla wafers
12 pitted chopped dates
1 c. toasted walnuts
3 tbsp. butter, melted

Preheat oven to 350 degrees. Mix crust ingredients processor. Press in spring form pan. Bake 10 minutes until golden and cool.

FILLING:

2 (8 oz.) pkg. cream cheese
1 c. packed brown sugar
1/2 c. pure maple syrup
6 lg. egg yolk
2 lg. eggs
2 c. whipping cream

Beat cream cheese and sugar until smooth. Add syrup, yolks, eggs and cream. Whip until creamy. Place pan in another larger pan and pour 1 1/2 inches of hot water in outer pan. Bake about 70 minutes until cheese doesn't shake. Remove cheesecake from water. Mix sour cream and sugar spoon on cheesecake. Bake 5 minutes cool completely.

TOPPING:

2 c. sour cream
1/4 c. firm packed brown sugar
Maple date walnut sauce: 1 c. maple syrup
3/4 c. dates
3/4 c. walnuts

Spoon maple walnut date sauce on top of edges of cake. Chill.
