PETITE CHEESECAKES 
2 lg. pkg. cream cheese
1 tbsp. lemon juice
2 eggs
1 tsp. vanilla
3/4 c. sugar
Vanilla wafers
1 can pie filling (cherry or blueberry)

Line muffin tins with 24 baking cups. Blend cream cheese, sugar, eggs, lemon juice and vanilla with electric mixer until fluffy. Place vanilla wafer in each baking cup. Top each wafer with cream cheese mixture, about 2 teaspoons. Bake at 350 degrees for 15 minutes. Cool. Top with pie filling. Store in refrigerator.

NOTE: Cheesecake drops a little after baking. With cherry filling, put 2 or 3 cherries plus a little sauce. Serve with a dab of whipped topping.
