Cook apples on top of range and run through a sieve. Put 2 gallons of applesauce in a vessel that will fit in oven. Add 1 cup vinegar, stir and put in oven. Bake uncovered at 325 degrees for 3 hours, stirring occasionally. Remove from oven and stir in 5 pounds sugar. Return to oven and cook 3 hours longer, covered. Add 3 or 4 tablespoons of ground cinnamon or any flavor desired. Put in jars and seal. Place in hot water bath for about 5 minutes. (5 pounds sugar is about 10 cups sugar.)
