CHOCOLATE CHIP MUFFINS | |
2 1/4 c. flour 1/4 c. light brown sugar 1 tbsp. baking powder 1/2 tsp. salt 1 c. regular or mini chips 1/2 c. chopped nuts 1 egg, lightly beaten with 1/4 c. oil or melted butter Sift together flour, brown sugar, baking powder and salt. Add chocolate chips and nuts; toss to coat. Mix egg and oil mixture into dry mix, stirring lightly and quickly, just to mix. Grease bottoms only of muffin tin or use paper baking cups. Fill each cup 2/3 full. Bake at 425°F for 20 minutes, until light brown. Easy to double. Nuts may be omitted, just add more chips or omit chips and use all nuts instead. Makes 18 muffins. |
