BROCCOLI - CHEESE SOUP 
1 1/2 lbs. fresh broccoli
1 pt. half & half
2 c. water
1 lb. Velveeta cheese
3/4 tsp. salt
1/2 tsp. pepper (opt.)
1/2 c. cornstarch in 1 c. cold water

Steam broccoli until tender. Place half and half with water in top of a double boiler. Add cheese, salt and pepper. Heat until cheese melts. Add broccoli. Mix cornstarch and water in small bowl. Stir into cheese mixture in top of double boiler. Heat until soup thickens. Makes 10 (1 cup) servings.
