BAVARIAN RICE | |
3 c. milk 1/4 c. lemon rind, grated 1/2 c. uncooked rice 1/8 tsp. salt 1 tsp. vanilla 1/2 c. sugar 2 tbsp. gelatin 1/2 c. cold water 1 c. whipping cream Strawberries 1. In small bowl sprinkle gelatin in 1/2 cup cold water and set aside. 2. Heat milk and lemon rind in top of double boiler. 3. When hot, add rice and salt, stirring often. 4. Cook until rice is tender. 5. Add vanilla, sugar and gelatin that has been soaking in water. Mix delicately. 6. Fold whipped cream into rice mixture as it begins to set. 7. Pour into large decorative mold. Refrigerate until firm. 8. Unmold. Serve with fruit. Makes 8-10 servings. |
