BOILED CUSTARD 
8 eggs, separated
1 1/4 c. sugar
Pinch salt
2 qts. sweet milk
4 tbsp. plain flour
1 tsp. nutmeg
1 or more tbsp. vanilla

Mix flour, sugar and salt together. Add slowly to beaten egg yolks and beat until creamy, add to scalded milk. Cook over low heat until begins to bubble. Do not over cook or will curdle. Remove from heat, beat egg whites until stiff and spread over top of hot custard. Do not disturb until completely cool. Add flavoring and gently fold the egg whites. Chill before serving.
