SWEET POTATO SOUFFLE 
3 c. sweet potatoes, peeled & mashed
3 tbsp. soft butter
1 sm. can crushed pineapple (in own juice), drained well
1/2 tsp. salt
1/2 tsp. lemon rind
2 beaten egg yolks

Mix ingredients well and fold in 4 beaten egg whites. Place in a buttered and sugared 7 inch souffle dish and bake for 40 minutes in a 350 degree oven.
