Ritz crackers (according to amount of cookies desired)
Peanut butter (either chunky or smooth)
Candy coating mix
Cooking chips

If you want chocolate cookies, use 1/2 chocolate chips and 1/2 candy coating mix. If you want light cookies, use white candy coating mix and butterscotch chips.

Spread cracker with peanut butter; cover cracker well. Top with another cracker; set aside. Continue making the cracker sandwiches until you have the desired number made.
