SQUASH/SAUSAGE CASSEROLE 
1 lb. pork sausage
1 clove garlic, crushed
4 c. sliced summer squash
1/2 c. dry bread crumbs
1/2 c. grated Parmesan cheese
1/2 c. milk
1 tbsp. parsley, snipped
1/2 tsp. salt
1/2 tsp. oregano, crushed
2 eggs, beaten

Brown sausage with garlic and drain well. Cook squash in small amount of water until almost tender. Combine bread crumbs with Parmesan cheese, milk and seasonings. Add squash and sausage. Fold in eggs. Bake in casserole dish at 325 degrees for 25-30 minutes. Makes 4-6 servings.
