SQUASH SAUSAGE CASSEROLE 
2 lbs. squash sliced thin and cooked in microwave 5 to 6 minutes and drained
1 med. onion, diced
1 green pepper, diced
1 can cream of mushroom soup
3/4 c. cracker crumbs
1 lb. hot sausage, cooked and drained, then crumbled
8 oz. sharp cheddar cheese

Combine all ingredients except cracker crumbs and cheddar cheese and place in a casserole dish. Top with cheddar cheese and cracker crumbs. Bake at 400 degrees for 45 minutes or until bubbling and browned.

Since microwave ovens vary in power, you may need to adjust your cooking time.
