PIEROGI - VARENIKI 
4 c. flour
3/4 c. water
1 egg

Pour flour into large bowl. Add eggs and water; mix well. Knead dough until smooth. Roll dough with rolling pin. Cut with large round cookie cutter. Fill dough with 1 tablespoon of Cheese or Sauerkraut Filling. Drop into boiling water, salted, for about 5 minutes; drain. Saute 1 large onion (chopped) and 1 stick of butter 3 to 5 minutes. Place mixture on Sauerkraut Pierogi or melt 1 stick of butter to pour on Cheese Pierogi.

CHEESE FILLING:

1 lb. Farmers cheese
1 egg
Pinch of salt

Mix cheese, egg, and salt together. If cheese is dry, add a little milk; mix well.

SAUERKRAUT FILLING:

1 lb. can sauerkraut
1 med. onion, chopped
1/4 stick butter
Salt and pepper to taste

Cook sauerkraut about 45 minutes. Drain. Saute chopped onion in butter until golden brown. Add sauerkraut, salt, and pepper; mix well.
