SUGARLESS CONGEALED FRUIT SALAD 
2 env. unflavored gelatin
1 sm. can crushed pineapple
3/4 c. apple juice concentrate (undiluted)
2 c. boiling water
1 1/2 to 2 c. chopped fresh fruit (grapes, peaches, nectarines, apple, pear,
blueberries, melon balls, etc. mixed (in season--I also like to add a small
amount of pineapple tidbits)

Drain juice from crushed pineapple, reserving juice. Pour juice over gelatin, add boiling water, stir until gelatin is dissolved. Add apple juice concentrate. Place in freezer, just until begins to thicken. Add fruit and place in five cup salad mold. Chill until firm. Unmold on lettuce leaves.
