CAPE COD CRANBERRY NUT COFFEE
CAKE
 
1 stick butter
1 c. sugar
2 eggs
1 tsp. baking powder
1 tsp. baking soda
2 c. all purpose flour
1 c. sour cream
1/2 tsp. salt
1 tsp. almond flavoring
1 (16 oz.) can whole berry cranberry sauce
1 c. chopped walnuts

Cream butter and add sugar gradually. Add unbeaten eggs one at a time. Mix baking powder, soda, flour, and salt; add to egg mixture alternately with sour cream.

Add the flavoring plus 1/2 cup of the walnuts. Grease and flour well a tube or bundt cake pan. Put a layer of batter in the bottom of pan. Then add 1/2 can of the cranberry sauce and spread evenly. Add remaining batter, putting remaining cranberry sauce on top. Sprinkle with remaining walnuts. Bake in 350 degree oven for 55 minutes. Remove from pan after cooling for 20-25 minutes.
