FRENCH OVEN BEEF STEW | |
2 lbs. beef, cut into 1 1/2 inch cubes 2 med. onions, cut into eights 3 stalks celery, cut into diagonal pieces 4 med. carrots, cut in half crosswise and lengthwise 2 or 3 potatoes, cut into 1/4 inch thick slices 1 c. tomato juice 1/3 c. quick-cooking tapioca 1 tbsp. sugar 1/2 tsp. salt 1/8 tsp. pepper Combine beef, onions, celery, carrots, potatoes. Put in a 2 1/2 quart casserole or 9 x 13 inch cake pan (glass). Combine tomato juice, tapioca, sugar, salt and pepper and pour over top. Cover and cook at 325 degrees for 3 1/2 hours. 8 servings. |
