CHIP 'N CHEESE FILLETS | |
1 lb. fresh or frozen fish fillets 2-3 tbsp. creamy salad dressing 1/2 c. crushed potato chips 1/4 c. (1 oz.) shredded American cheese (opt.) BE SURE TO COAT ONLY THE TOPS OF THE FILLETS. Thaw fish if frozen. In an 8"x8"x2" baking dish, arrange fish fillets with thicker portions toward edges of dish. Turn under any thin portions to obtain an even thickness. Spoon salad dressing over fish. Pat on crushed potato chips. Cook, uncovered on 100% power (HIGH) for 4 to 7 minutes until fish flakes easily with a fork, giving a dish a half turn once. Sprinkle with shredded cheese. Cook on HIGH 30 to 60 seconds more until cheese begins to melt. Use a wide spatula to transfer fillets to a serving platter. Yield: 4 servings. |
