SPINACH SQUARES 
2 (10 oz.) pkgs. frozen chopped spinach
3 tbsp. butter
1 med. onion, chopped
1/4 lb. mushrooms, sliced
4 eggs, beaten
1/4 c. fine bread crumbs
1 (10 1/2 oz.) can cream of mushroom soup
1/4 c. grated Parmesan cheese
1/8 tsp. pepper
1/8 tsp. oregano
1/8 tsp. basil

Oven temperature: 325 degrees. Thaw spinach and thoroughly press out water. Melt butter in frying pan; add onion and mushrooms, stirring over medium heat until onion is limp. Combine eggs with bread crumbs, mushroom soup, 2 tablespoons cheese, seasonings and spinach. Blend with onion mixture. Turn into greased 9"x13" pan. Sprinkle with remaining cheese. Bake 35 minutes or until set. Cool slightly and refrigerate. Cut into 1" squares. Serve cold or reheat for hot hors d'oeuvres.
