SPICY GRILLED CATFISH 
4 (6 oz.) catfish fillets
1/4 c. bottled lemon juice
1/4 c. soy sauce
1/4 c. vegetable oil
2 tbsp. finely chopped fresh gingerroot or 2 tsp. ground ginger
6 cloves garlic, finely chopped (1 tbsp.)
3 green onions, chopped
1 tsp. instant minced onion
1 tsp. paprika
1/4 to 1/2 tsp. cayenne pepper

In a shallow dish, arrange catfish fillets. In a small bowl or jar, combine lemon juice, soy sauce, vegetable oil, ginger, garlic, green onions, minced onion, paprika and cayenne pepper. Pour it over catfish. Cover, marinate in the refrigerate for 1 to 2 hours.

Remove the catfish from marinade; grill or broil 4 minutes on each side, or until catfish flakes with fork. Makes 4 servings.

This recipe is just about perfect! I have a lemon tree so used fresh lemon juice, and I minced my garlic, but kept the quantities as written, and it works great! I grilled for eight minutes (Green Egg, covered, cast iron grate, Royal Oak lump charcoal) carefully turning the fillets twice and basting with marinade once per side. The balance of flavors is great. I used 1/2 tsp. cayenne which was a little bit hot, but good for my family. Probably nearly as good on a gas grill or under the broiler.

We tried the Spicy catfish last night and it was wonderful. Didn't have ginger or green onions and only had time to dip fish in marinade for a few minutes, but it didn't matter because it was still so tasty and delicious.
