BRAN MUFFINS 
1 1/4 c. sifted flour
1 tbsp. baking powder
1/2 tsp. salt
1/3 c. sugar
1 1/2 c. Kelloggs 40% Bran
1 1/4 c. milk
1 egg
1/4 c. vegetable oil

Stir together flour, baking powder, salt and sugar. Set aside. Mix cereal and milk into large bowl, stir to combine. Let stand 1-2 minutes or until cereal is softened. Add egg (beaten) and oil. Beat well. Add flour mixture, stirring only until combined.

Portion batter evenly into 12 greased 2 1/2 inch muffin pan. Bake at 400 degrees for 18-20 minutes or until brown. Raisins or nuts may be added if so desired.
