MEXICAN CASSEROLE 
1 lb. ground beef
1 pkg. taco seasoning mix
2 c. canned tomatoes
1 lg. onion
1 c. whole kernel corn
1 (12 oz.) pkg. corn bread mix

Brown beef until crumbly. Dice onion, add to beef. Stir in dry taco seasoning mix. Add tomato and drained corn. Bring to soft boil, stirring frequently. Pour into 2 quart casserole. Carefully top with corn bread batter made from package of corn bread mix. Bake at 400 degrees for approximately 15 minutes or until brown. Serves 6.
