MEDITERRANEAN BEEF AND
VEGETABLES
 
1 lb. ground beef
1/2 c. onion, chopped
1/2 c. green pepper, chopped
1 c. canned tomatoes, drained
1 c. whole kernel corn
1/8 tsp. garlic salt
1/4 tsp. black pepper
1/4 tsp. allspice
1/2 tsp. oregano
1 c. shredded cheddar cheese
1/2 c. ripe olives, sliced

Saute onions and green peppers. Add meat in chunks and brown. Drain. Add tomatoes, corn and spices; cook slowly for 20-30 minutes. Stir in 3/4 cup of cheese and olives. Top with remaining cheese and serve with mashed potatoes, rice or pasta. Serves 5-6.
