MASHED POTATO SALAD 
Instant Potato Buds or Flakes
butter
Milk
Mayonnaise
2-3 tbsp. mustard
Salt to taste
Pepper to taste
Accent to taste (optional)
4-6 hard boiled eggs
4-6 stalks celery
1/2-3/4 lg. onion

Follow instructions on instant potato box for number of servings desired. You may add some more flakes to stiffen potatoes before adding other ingredients. Chop onions, celery and hard-boiled eggs into small pieces (a food processor is perfect). Add these to potatoes. Next, add mayonnaise a little at a time, beginning with 3-4 tablespoons until mixture is smooth and to your taste. Add mustard then salt, pepper and Accent to taste. This salad is best if made the day before and is served cold.

This is a great dish for children since using the food processor and mashed potatoes creates a smooth taste sensation with few "unknown" chunks of food to question as we know they always do!
