SWEET POTATO SOUFFLE 
2 med. sweet potatoes, peeled, diced or canned
2 c. milk
1 c. sugar
3 eggs
1/2 stick butter
1/4 tsp. ginger, cinnamon and nutmeg
1/2 tsp. vanilla

Mix all the ingredients in a blender. Bake at 350 degrees for 30 minutes or until done.
