BLACK-EYED PEA SALAD 
2 (10 oz.) pkgs. frozen black-eyed peas
1 c. bottled Italian salad dressing
2 tsp. sugar
1/4 tsp. crushed red pepper
1/2 c. celery, sliced
1/2 c. green and red peppers, chopped
1 bunch green onions, thinly sliced
1/4 c. parsley, chopped
Salt & pepper to taste
Lettuce leaves

Cook peas as directed on package. Drain. Shake Italian dressing, sugar and crushed red peppers into tightly closed container. Combine cooked peas, dressing, celery, green peppers, red peppers, onions, parsley, salt and pepper. Chill and serve on lettuce leaves. Yield 6 servings.
