BLACK-EYED PEA SALAD 
2 (10 oz.) pkgs. frozen black-eyed peas
1 c. bottled Italian salad dressing
2 tsp. sugar
1/4 tsp. crushed red pepper
1/2 c. sliced celery
1/2 c. chopped green pepper
1/2 c. chopped red bell pepper
1 bunch green onions, thinly sliced
Salt and pepper to taste

Cook peas as directed on package; drain. Shake Italian dressing, sugar and crushed red pepper in tightly covered container. Combine cooked peas, dressing, celery, peppers, onions, salt and pepper. Chill. Yield 6 servings.
