BLACK-EYED PEAS SALAD | |
1 lb. blackeyed peas 2 pkgs. green onions 3 hard boiled eggs Olive oil Vinegar Salt Pepper Soak peas as directed on package. Cover and simmer 1-1 1/2 hours until tender. When ready, drain and let cool. Slice onions (white part only). Chop eggs and mix with peas. Add olive oil, vinegar, salt and pepper to taste. |
