MIRACLE BARS 
1/2 c. butter
1/4 c. sugar
5 tbsp. cocoa
1 tsp. vanilla
1 egg
2 c. graham cracker crumbs
1 c. coconut
1/2 c. nuts

Mix butter, sugar, cocoa, vanilla and egg in a bowl. Put over boiling water until butter is melted. Remove and add graham crackers, coconut and nuts. Pack into 9x9 pan. Do not bake.

ICING:

1/4 c. butter
3 tbsp. milk
2 c. powdered sugar
2 tbsp. vanilla pudding mix

Spread over first mixture and let stand 15-20 minutes. Melt 4 squares semi-sweet chocolate and 1 tablespoon butter. Put over icing.

This is a great recipe for a candy-like cookie bar. I loved these when I was a kid 40 years ago and my son loves them today! I usually omit the coconut and add an extra half cup graham cracker crumbs. For the icing (middle layer), cut room temperature butter into the powdered sugar with a pastry blender and mix the milk and pudding together before adding to the buttery sugar. That's an easy way to make a really creamy filling. Spread the layers with a silicone spatula.
