RED VELVET CAKE 
2 1/2 c. flour
1 c. buttermilk
2 eggs
1 tbsp. baking soda
1 tbsp. vinegar
1 1/2 c. sugar
1 1/2 c. Wesson oil
1 tbsp. vanilla
1 tbsp. cocoa
1 (1 oz.) bottle red food coloring

Mix all ingredients at once in large mixing bowl. Grease and flour three 9" layer pans. Bake at 325 degrees for 30 minutes. Cool and frost.

FROSTING:

1 box conf. sugar
1 (8 oz.) cream cheese
1 tsp. vanilla
1 stick butter
1 c. pecans, chopped

Mix together. One to two tablespoons of milk might be needed for good spreading.
