RAISIN PUFF COOKIES 
2 c. raisins
1 c. water
1 c. oil
1 1/2 c. sugar
2 eggs
1 tsp. vanilla
3 c. flour
1/2 tsp. salt
1 tsp. baking soda

Boil water and raisins until water is gone. Cool. Mix oil and sugar; add eggs and vanilla, mix with raisins. Add mixed dry ingredients. Make into balls, roll in sugar. Bake on ungreased cookie sheet, 15 minutes at 350 degrees. Makes approximately 4 dozen.

DIETITIAN'S NOTE:

The sugar in this recipe can be decreased to 1 cup without sacrificing flavor (thanks to the concentrated sweetness of raisins). Use egg substitute to rid these cookies of cholesterol.
