PRUNE SPICE CAKE | |
1 lb. 91 1/2 c.) prunes 1 1/2 c. sugar 1 tsp. salt 1 tsp. nutmeg 1/2 c. salad oil 1 recipe crumb top 2 c. flour, plain 1 1/4 tsp. baking soda 1 tsp. cinnamon 1/2 tsp. cloves 3 eggs 1/2 c. broken California walnuts Cook prunes 20 minutes or until tender. Drain. Reserve 2/3 cup liquid. Pit and chop prunes. Sift dry ingredients. Add prune liquid and salad oil. Mix. Beat 2 minutes. Add eggs, beat 1 minute. Stir in prunes. Pour in greased and floured 13 x 9 x 2 inch pan. Sprinkle crumb top. Bake at 350 degrees for 35 minutes. CRUMB TOP: 1/2 c. sugar 2 tbsp. flour 2 tbsp. butter |
