MISSISSIPPI MUD PIE 
1 c. flour (all purpose)
3/4 c. pecans
1 stick Parkay
2 1/2 tbsp. sugar
1 c. Cool Whip
1 (8 oz.) pkg. soft cream cheese
1 c. powdered sugar
1 tsp. vanilla
1 lg. or 2 sm. pkgs. instant pudding (any flavor)
2 1/2 - 3 c. milk
Chopped pecans (opt.)
Chocolate pieces (opt.)

Mix first 4 ingredients together and spread in bottom of 9"x13" pan. Bake at 350 degrees until lightly brown. Let cool.

Mix Cool Whip, cream cheese, powdered sugar and vanilla and spread over cool crust.

Mix and beat well with electric mixer pudding and spread over cream cheese mixture. Top with Cool Whip and any other ingredients. Refrigerate until set.
