FUNNEL CAKES 
Oil in fry in
3 c. flour
1/4 c. sugar
1 tsp. baking powder
1/2 tsp. salt
3 eggs
2 c. milk
1 tsp. vanilla
Powdered sugar

Mix dry ingredients. Add milk, eggs and vanilla and beat to a smooth batter. Pour batter into hot oil, using a slow wide circular motion and maintaining as steady a stream as possible. Fry, turning once, until golden brown. Drain on paper towels. Dust generously with powdered sugar. Serve warm. 16 large cakes.
