FUNNEL CAKES 
2 c. flour
1 tbsp. sugar
1 tsp. baking powder
1/4 tsp. salt
2 eggs, lightly beaten
1 1/4 c. milk
Oil for deep frying

In medium bowl, combine first 4 ingredients and mix well. Make a well in center of flour mixture and stir in eggs and milk to form a smooth batter. In a large skillet heat 1 1/2 inches of oil until very hot, but not smoking. Pour batter in a slow stream into hot oil, rotating it to form rings of batter. Fry until golden brown on both sides; sprinkle with powdered sugar and serve warm.

I like to use the Tupperware pancake shaker instead of a funnel, to pour from.
