FUNNEL CAKE 
2 1/2 c. flour
1/3 c. dry milk
1/4 c. sugar
1 tbsp. plus 1 1/2 tsp. baking powder
1 tsp. baking soda
1 tsp. salt
2 eggs
1 1/2 c. water
Oil or shortening for frying
Confectioners sugar

Omit if using self rising flour.

Mix flour, milk, baking powder, soda, and salt in bowl. Stir in eggs and water. Let stand 15 minutes. Using a funnel with 1/2 inch opening, holding finger over hole, fill with about 1/2 cup of batter. Remove finger and drop batter in spiral pattern in hot oil. Fry about 1 minute until golden brown. Drain on paper towel and sprinkle with powdered sugar.
