CREAM OF MUSHROOM SOUP 
1 c. mushrooms, chopped
2 tbsp. chopped onion
3 tbsp. butter
2 tbsp. all-purpose flour
2 c. chicken or beef broth
1/2 c. light cream
1/2 tsp. salt
1/2 tsp. pepper
1/4 tsp. nutmeg

Cook mushrooms and onions in butter 5 minutes. Blend in flour. Add broth. Cook and stir until slightly thickened. Cool slightly. Add cream and seasoning. Heat through.

Serves 6.

Can be doubled or tripled.
