ORANGE TRUFFLES 
12 oz. semi-sweet chocolate
4 tbsp. unsalted butter, softened
1/2 c. orange juice
Grated rind of 1 orange
Sifted cocoa

Break chocolate into small pieces and melt in double boiler. Transfer to mixing bowl and beat in butter. Add orange juice and orange rind.

Chill 1-2 hours until firm; roll into 1-inch balls. Roll in cocoa; store in air-tight container. Makes 2 dozen.

Can substitute 1/2 cup Kahlua for orange juice and rind.
