OLD-FASHION BEEF STEW | |
2 lb. beef chuck, cut in 1 1/2 inch cubes 2 tbsp. oil 4 c. boiling water 1 tbsp. lemon juice 1 tbsp. Worcestershire sauce 2 cloves garlic, minced 2 med. onions, sliced 2 bay leaves 1 tsp. salt 1 tsp. sugar 1 tsp. pepper 1 tsp. paprika Dash of allspice 6 carrots, sliced thickly 4-6 med. potatoes, halved Brown meat in hot oil. Add water, lemon juice, Worcestershire sauce, onion, garlic, bay leaves, and seasonings. Cover and cook on simmer for 2 hours, stirring occasionally. Remove bay leaves. Add vegetables. Cover and cook 30 minutes, or until vegetables are done. If gravy is desired, remove meat and vegetables. Thicken liquid with 1/4 cup enriched flour, stirring constantly, until gravy thickens. Cook about 5 minutes more. Pour over meat and vegetables. |
