ZUCCHINI BOATS 
2 med. zucchini, cut in half lengthwise
1/4 c. chopped green onions
1/2 c. chopped fresh tomatoes
1/2 c. smashed, cooked garbanzo beans
1/8 tsp. marjoram
1/4 tsp. pepper
1/4 tsp. basil

Hollow out inside of each zucchini half, leaving a 1/4 inch thick shell. Chop zucchini pulp. In a medium bowl, mix zucchini pulp, green onions, tomato, 1/4 cup of spices, and garbanzo beans. Fill zucchini halves with mixture. Place in a shallow dish. Cover tightly. Microwave on high for 5 minutes. 4 servings.

Since microwave ovens vary in power, you may need to adjust your cooking time.
