MARINARA SAUCE 
3 tbsp. olive oil
1 sm. onion
1 celery stalk, chopped
1/2 med. green pepper, chopped
1 (28 oz.) can crushed tomatoes
1 (15 oz.) can tomato sauce
1 (6 oz.) can tomato paste
1/2 tsp. minced garlic
1/2 tsp. dried basil
1/4 tsp. black pepper
1 tsp. dried parsley
Dash of red pepper (to taste)

Heat the olive oil in a 6 quart saucepan over medium heat. Add the fresh onion, celery and green pepper, saute until transparent. Add the tomato products and stir thoroughly. Add the remaining ingredients. Simmer for 30 minutes, stirring frequently. Best made day or two ahead.
