LYNN'S MARINARA SAUCE 
1 lg. yellow onion, chopped
1 med. hot or hot pepper deveined, seeds removed, diced
1/2 c. Good Quality extra virgin olive oil
4 garlic cloves, finely chopped
3 1/2 lbs. fresh tomatoes (or 1-1 lb. 13 oz. can tomato sauce and 1-1 lb. 13 oz. can whole tomatoes and 1 (6 oz.) can tomato paste)
1 tsp. dried oregano (or 1 sprig fresh)
4 basil leaves, finely chopped (or 2 tsp. dried)
Salt to taste
Optional: 1 c. zucchini, sliced, 1 c. diced yellow, red, green pepper, 1 c. diced celery

Saute onion and pepper in olive oil until translucent. Add remaining ingredients and simmer about 40 minutes.
